Ingredients

For the Salad

  • 1 ½ C sunflower sprouts
  • 1 C arugula
  • 2 carrots, shaved or chopped
  • 3 radishes sliced thin
  • 1 small-medium cucumber, sliced

For the Dressing

  • 2 T fresh lemon juice
  • ½ – 1 teaspoons agave
  • ½ teaspoons Dijon mustard
  • ¼ teaspoons kosher salt
  • ¼ C olive oil

Method

Preparing the toast

Mix all of the vegetables together.

Combine all Dressing ingredients in a mixing bowl.
