Microgreens and Avocado Toast
Beneficial fat from the avocado will keep you from getting hungry later in the day, while the buttery flavor & high protein from the sunflower microgreens maintains muscle. Spicey, creamy and crunchy - You just might skip lunch!

Ingredients
For the toast
- 1 Slice of Dave's WHITE BREAD DONE RIGHT
- 1/2 tsp butter
- 1/2 tsp olive oil
For vegetable and spices
- 1 small bunch sunflower microgreens, fresh
- 1 small bunch red radish microgreens, fresh
- 1 small bunch broccoli microgreens, fresh
- 1 half haas avocado, smashed
- 1 dash crushed red pepper
- 1 dash garlic powder
- 1 sprinkle sea salt
- balsamic glaze(syrup)
Method
Preparing the toast
- Heat a medium size pan over medium or medium to high heat
- Melt the butter & olive oil together. Add the slice of bread and allow it to absorb a portione of the oil & butter for a moment, then quickly turn it over so can doesn’t absorb the rest of the butter and oil.
- Continue to toast each side on medium until the bread is brown and crispy, about 2-4 minutes.
Preparing the topping
While the bread is toasting. Mash 1 half of a ripe avocado, by simply squeezing out the inside with your hand. And if you prefer it to be more mashed, push down on it with a sturdy fork.
Put it all together
On the most buttered side of the bread slice. Add a good dose of pioneer fresh greens sunflower microgreens.
Scoop the avocado with a soup spoon (or spatula) and add that.
Dust with sea salt, a dash of crushed red pepper and garlic powder. And lightly drizzle with balsamic glaze(syrup).
And savor! So decadent & satisfying. To be honest, I’m not a fan of balsamic vinegar. BUT, the balsamic glaze(syrup) takes this to a whole other level. Almost like a spicy torte or hearty cake.
I’m sold! And so is everyone else that’s tried this.
